80% Sangiovese; Blend 20% of other races. Around 18 months aging in oak barrels. At least 6 months of bottle age before release. Made around 3500 bottles.

It would be difficult to grow grapes in the Chianti Classico and not make the DOCG wines of the region.

Remains open Il Borghetto here the tradition with and to cask Chianti Classico with the mandatory minimum of 80% Sangiovese, blended with Cabernet Sauvignon, Merlot and Cannaiolo all grown on Borghetto.

Personal note: A beautiful Chianti. The way Mr. Cavallini describes the "I live here anyway, let me even a DOCG wine making" reflects a bit of rebellion that I believe him alive against the highly regulated DOCG requirements where a small producer like himself but little in the porridge has chunks. Most importantly, he makes beautiful lovely wines.
