VINIFICATION and aging: a controlled temperature vinification in stainless steel container, aging part in large French oak barrels and partly in small French oak barrels (barriques) for 24 months. The wine is aged in the bottle for at least 36 months.
FOOD PAIRING: Appetizers (in Italy at least) with structured sauces such as pappardelle with wild boar, red meat, perfect with steak florentine. Even very old cheese like pecorino of Pienza.
